I'm not quite sure what "Paladin" armor is, but if you're comparing Knight's armor and Ascalon armor (in Droknar's Forge): they are exactly the same apart from looks.

As to what is the "best", it depends on your playstyle and what you're trying to do. Give us some insight into your build, your expectations, where you normally fight (PvP any?) and so on and we here at the Guru will try our best to help you make an educated decision.

For Ascalon/Knight's armor, the "Reduces damage from attacks" bonus will work for all your pieces of armor, even if you only have one piece of Ascalon/Knight's armor. Most people equip their boots or gloves (since these areas get hit the least) with Ascalon/Knight's, using Platemail or Gladiator's in the other slots.

If you're a little vain (like i am) and want all your armor to match you can use the headgear that gives the damage reduction and then choose to permanantley hide it from your inventory, that way no-one need know.

It has been tested many times and you only need 1 piece of knights/ascalon for the full bebefit of the damage reduction.

As much as it says per position in french, and indeed in the english online manual; the fact is that the effect is global, and the manual/french description are inaccurate.
